‘Soup’er Recipe – Potato Soup

posted in: 'Soup'er Sunday, Recipes | 0

When the days cool down I always yearn for a delicious bowl of soup.

For ‘Soup’er Sunday here is a quick and easy potato soup.  It takes a few minutes of prep and about half hour to cook.

I use 2 medium white potatoes, 1/4 cup of celery and 1/4 cup of  onion.  I use sweet onion but you can use any that you prefer.

Cube the potatoes and chop the celery and onion.  Almost cover with water, just over a cup worked in a medium saucepan.  Add salt and pepper or other seasonings that you like.

Bring to a boil for about 5 minutes, and then simmer till potatoes are soft but not falling apart, about 20 minutes.

Don’t drain, but mash to a lumpy consistency.

Add half cup of milk, more or less, to get the consistency you like.  If you really like smooth soup you could add it to the blender for a minute or two.  Return to the heat and simmer slowly for about 5 more minutes.

Serve and enjoy.  This makes about 2 cups of soup.  To make more just increase the recipe.

Have you enjoyed a delicious bowl of soup lately?  What is your favourite?
