Cooking with Rhubarb

Is rhubarb a vegetable or fruit? It is a perennial plant that is actually a vegetable but we tend to cook it with other fruits and treat it as a fruit. Rhubarb contains calcium, fibre, Vitamin C, iron and manganese. Even though rhubarb is low in calories the recipes made with rhubarb usually contain lots of sugar which makes it a sweet treat. This weekend I made a big dish of apple/rhubarb crumble. You can mix any fruit you wish with the rhubarb to make the crumble dessert. Printable recipe. Seeing the rhubarb poke through the ground on a chilly day is always a good sign that the garden is awakening after the long winter.  Technically rhubarb is a vegetable but we tend to treat it as being in the fruit category. On April 20, 2018 you can see the rhubarb crowns just poking through the ground after a wicked ice storm late in the season.  The crowns and first leaves are red, but quickly turn to green. Rhubarb Apple Crumble Recipe Rhubarb Apple Crumble  adapted from the Fruit crumble recipe from the Dairy Book of Home Cookery, revised edition 1977 Britain Ingedients 250 grams of rhubarb 250 grams of apples 100 grams to 175 grams granulated sugar Crumble topping: 150 grams of plain flour 75 grams butter, room temperature, slightly soft 50 to 75 grams caster sugar some brown sugar to sprinkle over the top before baking Method:  Cut rhubarb and apple into pieces and put into a 1 litre baking dish, mix in the sugar, as rhubarb will sink when cooking don’t be afraid to mound the fruit up

Six Layer Rhubarb Cake

The rhubarb has really been growing over the past couple of weeks and it was time to do some delicious baking with it.  I’m not a pie maker but do make cakes, muffins and crumble. This is the rhubarb garden in April of this year.  The plant was moved here beside the workbench and the plant tables in the Fall of 2014. Six Layer Rhubarb Cake Recipe

  Ingredients:  4 cups chopped rhubarb, 1/4 cup sugar,  4 cups mini white marshmallows, 1 box strawberry jello, white cake mix,  Cake topping:  1/4 tsp cinnamon,  1/2 cup brown sugar Mix cake mix according to directions, Grease 9×12 baking dish,   Layer in rhubarb, sugar, marshmallows, jello and then pour cake mix evenly over the top. Combine cinnamon and brown sugar and sprinkle over the top of the cake mix. Bake for 40minutes at 350 degrees F.
