Recipe: Corn Ribs

I participate in a zoom cooking class each month sponsored by Quinte Gardens and the Quinte Sport and Wellness Center. This month with corn being in season we made corn ribs.

Ingredients:

  • 2 ears of corn
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tbsp smoked paprika
  • kosher salt to sprinkle on
  • ground black pepper if you like

Husk the corn. Cut each cob into 8 pieces and arrange on a parchment lined baking sheet.

Brush each piece with the olive oil then sprinkle a mix of dry ingredients over each piece. Add salt and pepper if you wish.

Bake uncovered in a 375F oven for about 35 minutes. Pieces will gently curl.

Serve with a meal or with a salad. This was delicious and as a bonus was gluten free. The first time it was served with bbq chicken (forgot the photo) and the few that were remaining were delicious the next day with some potato salad and a sandwich.

Usually I boil corn, so this was a great, different way to cook it.

We have made a variety of food since the pandemic caused a shut down of the QSWC. The zoom cookery continues even as the seniors room at QSWC is back to regular programming. Thanks Chef Jesse for hosting this classes.

    I like this Linda so I must try it but would be just for me and maybe Dana would like to try it. Al can’t have corn but he liked corn prior to not being able to have it. Thanks.
