I love eggs and zucchini so combining them into one recipe was easy.
Thank you for reading this post, don't forget to subscribe!A frittata is an egg dish similar to an omelette or crustless quiche with veggies added. I love the farm fresh eggs I get on a regular basis from a neighbouring farm.
Ingredients for one:
- 3 eggs
- 1/2 cup cut up zucchini
- 1 small potato, chopped
- 3 or 4 cherry tomatoes
- sliced mozerella cheese
- sliced mushrooms
- parsley garnish
Pan fry the cubed potatoes in a small amount of olive oil till brown then add veggies and lightly saute. I put these on a piece of paper towel to remove any excess oil.
Mix eggs with a small amount of milk, and add to a lightly greased pan. Cover and let cook for a few minutes. Add veggies evenly over the top, cover and cook a little while longer. Some cooks add the cheese now and then pop under the grill until melted.
I let it cook a bit longer, add the cheese. Be sure all the egg mixture is cooked. Slide out of the pan onto a plate and garnish with parsley.
